The Victorinox Fibrox Pro 7-inch Santoku Granton Knife features a Fibrox handle and extremely sharp blade that holds its edge. The special shape of the Santoku blade is a Japanese take on the standard European chef’s knife. It’s the knife you’ll reach for for slicing, dicing and mincing.
A granton edge, or “kullenschiff” edge, has hollowed out grooves on the sides of the blade. These grooves fill with the fat and juices of the product being sliced, which allows for thin, even cuts without tearing or shredding the meat.
The patented Fibrox handle, favored by food service professionals, is dishwasher safe and slip resistant, even when wet. It is also NSF approved, as crevices that would offer hospitality to bacteria are minimized. As with all Fibrox Pro knives, the handle is ergonomically designed to minimize wrist tension and provides a natural fit.
Victorinox kitchen knives all have high carbon, stainless steel blades that are hand finished at Victorinox in Switzerland by skilled craftsmen. Each knife is stamped from a single sheet of metal. The blade is then hardened, tempered, ground, polished, etched and finished. Victorinox uses a special tempering process to produce an edge that can be resharpened over and over again.
