Coho Fillet Knife
The Coho Fillet Knife at 13 inches overall is three inches longer than its smaller cousin, the Steelheader Fillet Knife. Designed for medium and larger sized fish, the Coho sports a full 8 inch cutting edge. Hollow ground and razor sharp, your fish will fillet beautifully with this knife. The premium grade 440C stainless steel blade has a Rockwell hardness of 57-59 and holds a very sharp edge. Finely crafted tip serrations will enable you to quickly and cleanly cut through the toughest fish skin and small bones.
